Chocolate Cupcakes Easy Peasy

Giselle asked me for an easy chocolate cupcake recipe the other day and this is for her as well as anyone who like me can’t resist a good cake.

3oz Self Raising Flour

4 tablespoons cocoa powder

4oz caster sugar

4oz softened butter 

2 large eggs

1 teaspoon baking powder

2 teaspoons milk.

Put everything in a mixer, beat until pale and fluffy. Pop spoonfuls into prepared cupcake tin and bake for about 18 to 20 mins mins at 180c degrees. If you want you could mix in a big handful of chocolate chips just before you put them in the tin. Makes about 12.

As for icing follow the instructions in the other cupcake post but omit the lemon juice add 2 sifted teaspoons of cocoa to the icing mixture and 2 teaspoons of water.

  1. CherryHill – yes they are/were yummy with a lovely cup of Earl Grey tea!!

    Giselle – I have no idea if you can cook these in a pressure cooker. Although I did a quick search on google and it looks like it could be possible, I would check with your manufacturer. Shame you can’t drop by for afternoon tea:)

    It would have been nice to join you for afternoon tea.. We could have shared recipes and had some reading clubs and things like that…
    Wouldn’t that have been nice? 🙂
